Did you ever wish you could whip up a batch of tasty, comforting fried rice in your own kitchen? Have you ever wondered if you could turn a tub of day-old rice and a few random ingredients you probably already have in the fridge into a delicious meal? Well I’m here to tell you that you can! This is a departure from the usual theme of this blog, but everybody loves a good recipe, right?

There are two caveats to this recipe: 1) the rice must be made previously and cold – ideally leftover rice you need to use up. If you try to use freshly cooked rice it will stick together and be gummy; and 2) You need to have toasted sesame oil on hand. It really doesn’t taste right without it. Everything else depends on your preference, and what you have on hand.

Ingredients

  • Leftover, or cooked and cooled rice
  • Canola oil, or similar
  • onion
  • garlic
  • carrots, peas, other vegies
  • beaten egg
  • meat or other add-ins (optional)
  • soy sauce
  • toasted sesame oil

Making It
Cook egg in oil over medium heat. You can allow it to harden in a sheet, and chop it up a bit. Remove and set aside.

Add more oil, and cook onion, carrots, peas, garlic and any other vegies for a few minutes. Add rice and cook for a few more minutes. Stir in a few generous shakes of soy sauce. Add in any other pre-cooked items (e.g. meat) and cooked egg. When everything is cooked and starting to brown lightly, turn off the heat. Stir in a few shakes of toasted sesame oil, and voila, yummy fried rice!

Tancred to Release Nightstand

I first saw Tancred a couple years ago at the Catalyst Club in Santa Cruz. They opened for Speedy Ortiz, and put on a dynamite performance. After their set I said hi to Jess, and complimented them on their performance. She said it was the first time performing their then new album Out of the Garden, so they were really stoked, which showed. Their latest album Nightstand is coming on June 1, but of course there are a couple of tracks out on Spotify, YouTube and Bandcamp.

Tancred’s music is rocking and up tempo, but the feeling is both urgent and unsettled. The songs take you on an emotional journey. I have pre-ordered my copy, so you know what I’ll be doing come June 1. If you’re looking for some crunchy, emotional indie rock give Tancred a listen.

Skating Polly drop The Make It All Show

Among all the other new summer releases, let us not overlook Skating Polly, the hard-rocking family band from Oklahoma by way of the Pacific Northwest. Release date for their new album The Make It All Show is May 25, but it looks like all the songs are available now for streaming. I’ve already ordered my baby pink & red splatter vinyl deluxe package with the t-shirt, because that’s how I roll. Check out the video for Hollywood Factory, with cameos by Allison Wolfe (Bratmobile) and Abby (Pottymouth)!

I have listened to several cuts from The Make It All Show, and I can say it is more of the gorgeous, gutsy rock and roll that we have come to expect from these lit siblings. I really like Little Girl Blue and the Battle Envy, where they let themselves stretch out for a full six minutes of brooding, rumbling goodness.
